Poppy Seed Chicken


6 chicken breasts, diced ( I didn't use this much)
1 can cream of chicken soup
1 cup sour cream
2 tbsp. dry sherry
salt and pepper to taste
1 cup crushed Ritz crackers ( I used whole wheat Ritz)
1 1/2 tbsp. poppy seeds
1 stick butter, melted

1. Preheat oven to 350 degrees.


2. Place diced chicken breasts in a 13 x 9 baking dish coated in cooking spray.


3. In a bowl, combine the soup, sour cream and sherry. Pour over the chicken. Sprinkle with salt and pepper.


4. Mix the poppy seeds and the crushed crackers and sprinkle the mixture over the chicken. Salt and pepper to taste.


5. Drizzle melted butter on top and cover.


6. Bake for 30 - 45 minutes (depending on how much chicken). Take cover off for the last 5 minutes.
